One of Ilonggo’s favorite snacks for merienda is Inday Inday (rice dumpling) or palitaw in Tagalog. Food vendors in the streets and those who go to offices have their baskets with this common Filipino snack made of sticky rice dipped in grated coconut and topped with sesame seeds and white sugar, or in Ilonggo style. However, it is best to top it with muscovado sugar.
Ingredients
1. 1 kilo sticky rice
2. 3 cups water
3. 1 and a half cups of water for soaking
4. 1 coconut
5. sesame seeds (optional)
6. white sugar(optional)
7. muscovado sugar
Instructions
1. Bring the 3 cups of water to a boil
2. wash sticky rice
3. soak sticky rice for 3 hours
4. grind it (it becomes a soft dough)
5. take a teaspoonful of dough and flatten it with your hands
6. drop each dough in the boiling water (it will go straight to the bottom)
7. as soon as the dough reaches the surface, take it out of the pot by using a slotted spoon
8. roll it in coconut
9. and sprinkle it with muscovado sugar
