Bocarillo is an eastern Visayas sweet made from sweetened grated coconut with eggs and milk.
Bocarillo
Ingredients
• 1-1/2 cups sugar
• 2 cups grated coconut
• ½ cup evaporated milk (undiluted)
• 2 eggs, slightly beaten
• 1 tablespoon calamansi juice
Procedure
1. Mix sugar and grated coconut. Cook over moderate heat, stirring continuously to avoid burning.
2. Add milk little by little, continue to mix thoroughly.
3. Add slightly beaten eggs, continue mixing over moderate heat.
4. Flavor with calamansi juice.
5. Remove from fire.
6. Drop teaspoonfuls on wilted banana leaf or wax paper.
This recipe is good for 50 pieces of bocarillo.
Bocarillo is popular in Maasin City, Leyte. A large pack can cost at Php45 each and a small pack costs at Php25 each.
