The Banana Beach Resort at Madaum, Tagum City, Davao del Norte serves the yummiest deep-fried Hito in this side of the world.  Promise!

Hito (Freshwater Catfish) is cleaned, butterflied and the meat filleted, leaving the head intact and connected with the spine down to the tail.  It is then rubbed with salt and pepper, dipped in batter before deep-frying to a crisp.  Your crispy deep-fried Hito is then served with fresh tomatoes and onion rings plus you have a choice of dip or side dish: Soy Sauce with Kalamansi or Pickled Amplaya, Carrots and Singkamas.

For someone who hasn’t developed the taste for Hito until 2 years ago, when I say it is yummy, don’t take my word for it, you just have to try it!  Go north of Davao City to the Banana Beach Resort and indulge in Crispy Deep-fried Hito!
