When I was still a kid, I grew up eating and eating a lot! I could still remember every time I celebrate my birthday, there is one food that is always present, it is the Sahog.  



Sahog or generally known as Biko is a Filipino rice cake made from sticky rice (locally known as malagkit), coconut milk, and brown sugar. However, in some parts of Leyte like Abuyog, Dagami and Burauen they call it Sahog.



This is referred to as kakanin (derived from the word “kanin” which means rice) and is often eaten as a dessert or meryenda (mid-afternoon snack). 



Traditionally, this delicious rice cake is placed over banana leaves in a bilao (round woven bamboo tray) and garnished with latik (cooked coconut milk residue) on top. However, in our own version of Sahog, we don’t use latik as garnish. Instead, we use “lunok’’ the Waray word for the boiled first coconut milk extract or the curdled portion of the milk.



 Ingredients



<!--[if !supportLists]-->§  <!--[endif]-->2 cups glutinous rice (aka sticky rice or malagkit)



<!--[if !supportLists]-->§  <!--[endif]-->1 1/2 cups brown sugar



<!--[if !supportLists]-->§  <!--[endif]-->2 cups coconut milk (second extract)



<!--[if !supportLists]-->§  <!--[endif]-->2 cups coconut milk (first extract)



<!--[if !supportLists]-->§  <!--[endif]-->lunok 



Cooking Procedure



<!--[if !supportLists]-->1.Combine the sticky rice and 2 cups coconut milk (2nd extract) in a rice cooker and cook until the rice is ready.  Set aside.



<!--[if !supportLists]-->2. In a saucepan, boil 2 cups coconut milk (1st  extract) until oil is formed and the foamy white portion of the milk  turns brown (curdled portion or lunok).Set aside.



<!--[if !supportLists]-->3.Sprinkle and combine brown sugar and sticky rice in a separate pot and cook in low heat until the texture becomes thick. Stir constantly.



<!--[if !supportLists]-->4.Once the rice is cooked and sugar mixture is thick enough, continue cooking until all the liquid evaporates (but do not overcook).



<!--[if !supportLists]-->5.Scoop the cooked biko and place it in a serving plate then flatten the surface.

Sahog is served during special occasions such as birthday parties and family gatherings!
