Like the torta, another delicacy that is being sought after by fiesta goers in Barugo, Leyte is the ‘Roscas’. It is a crispy brown cookie shaped like a chicken leg.
It is sweet and crispy. This delicacy has a long shelf life that may last for several months. It is also the favorite “pasalubong” of Balikbayans.
Maybe one of the reasons behind the popularity of this delicacy to foreigners is its resemblance to the Spanish cookie Rosquillos. Roscas is probably influenced by the foods brought by the Spaniards to the Philippines.
Here are the steps in making the famous Roscas.
Ingredients:
1 ½ kilos flour
20 pcs. egg yolks
4 cups white sugar
3 cups lard
1 big can condensed milk
7 tsp. baking powder
1/2 cup water
Anise seeds
Procedure:
1.Sift flour and baking powder. Set aside.
2.In a separate bowl, beat egg yolks then add condensed milk, white sugar and water. Mix until sugar granules are well melted.
3.Then add lard and a dash of anise seeds. Continue stirring while adding gradually the flour mixture until dough hardens.
4.Knead and mold the dough. Mold it like the shape of a chicken leg and put it onto baking pans.
5.Bake in a moderate temperature (using a traditional oven) until it is half cooked.
6.Then take it out from the oven, slice it into two and return it into the oven until golden brown.
7.Let it cool and store into a closed container.
