Basic Rice Porridge



Ingredients
• 1 clove garlic, crushed
• 1 small onion, finely chopped
• 2 tablespoons ginger, sliced
• 4 tablespoons fish sauce (patis)
• 6 cups chicken broth
• 1 cup glutinous white rice
• 1/4 teaspoon ground pepper
• 3 stalks green onion
• pinch of kasubha



Procedure
1. In a medium saucepan, saute garlic, onion, and ginger.
2. Add fish sauce, pepper, and chicken broth.
3. Add glutinous rice and stir frequently.
4. Cover tightly and cook until rice is tender.
5. When porridge is almost cooked, add kasubha.

Ingredients
• 1 clove garlic, crushed
• 1 small onion, finely chopped
• 2 tablespoons ginger, sliced
• 1/2 kilo goto (beef tripe)
• 4 tablespoons fish sauce



Procedure
1. Wash the tripe thoroughly and put it in a casserole with enough water to cover the tripe.
2. Cook until slightly tender. Cut into 1/2" x 2" strips.
3. In a medium saucepan, saute garlic, onion, ginger, fish sauce, and tripe.
4. Cook until tripe is tender.
5. Pour the mixture over a bowl of steaming hot porridge.
6. Garnish with green onions and toasted




Arroz Caldo



Ingredients
• 1 clove garlic, crushed
• 1 small onion, finely chopped
• 2 tablespoons ginger, sliced
• 1/2 kilo chicken, cut into
• serving pieces
• 4 tablespoons fish sauce



Procedure
1. In a large saucepan, heat oil and saute garlic, onion, and ginger.
2. Add chicken pieces and fish sauce.
3. Cover and cook until chicken is tender.
4. Pour the mixture over a bowl of steaming hot porridge.
5. Garnish with green onion and toasted garlic.
