Lechon comes from the Spanish word leche or milk thus lechon refers to a suckling pig that is roasted over a pit of charcoal.
Beko’s Biik stuffs suckling pigs with onion leaves, lemon grass and other spices then roasts them over charcoal. The lechonero watches over the roasting and turns the lechon every now and then to avoid burning on the skin. A special marinade is brushed over the skin to make it crispy.
