Biko or rice cake with caramel topping is made from malagkit (glutinous rice), coconut milk, sugar and topped with latik (caramel).
Cooking time is usually an hour and 30 minutes but for the Sta. Monica biko, it takes longer because each side has to be toasted well to make it crunchy.
Crunchy on the outside, gooey and smooth on the inside and just enough sweetness makes Sta. Monica’s biko worth every bite for just PhP5 per slice.
