Kinilaw is made up of raw ingredients which is prepared and served without cooking.  The ingredient that “cooks” it is usually vinegar or kalamansi (native citrus).

Tuna meat is filleted then mixed with strips of radish, cucumber, unripe mangoes, onions and ginger.  Kalamansi or vinegar is poured over the mix right before serving to avoid “overcooking”.
